Ingredients

  • 1 Tbsp. coconut oil

  • 1 small onion, diced

  • 2 cloves of garlic, minced

  • 1 kg (around 10 pieces) zucchini, skin on, cut in big chunks

  • 4 cups vegetable stock

  • 1/2 Tbsp. dried basil

  • Salt & pepper, to taste

  • 1/2 cup coconut milk / any kind of milk / crème fraîche (optional)

  • Fresh herbs (optional)

Method

  • Heat oil in a pot over medium heat and sauté onions and garlic. Cook for a couple of minutes until softened.

  • Add zucchini and sauté for a few more minutes.

  • Add vegetable stock, dried basil, salt and black pepper.

  • Bring to boil and simmer for 20 minutes or until zucchini are completely tender.

  • Remove from heat and purée with an immerse blender. Return to pot, add the milk or cream if you prefer and cook for 7 mins.

  • Serve warm garnish with some crackers or fresh herbs if you prefer.
