Ingredients

  • 3 bunches of parsley (cleaned and finely chopped)
  • 1 bunch of Spinach (cleaned and finely chopped)
  • 1.5 cup cooked quinoa
  • 2 medium tomatoes (finely chopped)
  • 2 green onions (finely chopped)
  • 1 small bunch of fresh mint (thinly chopped) Dressing
  • 1 teaspoon kosher salt plus more
  • 1 lemon freshly squeezed
  • 2 garlic cloves, minced
  • 1 cup extra-virgin olive oil
  • Freshly ground black pepper
  • Salt to taste

Method

  • Mix all tabbouleh ingredients together
  • Mix all dressing ingredients and then add to tabbouleh mixture
