Ingredients

  • 6 large handfuls of various lettuce and greens mix
  • 1 small bunch of radish thinly sliced A handful of walnuts, dry toasted A loaf of good sourdough or country bread, cut and toasted
  • 1 teaspoon of dried mint
  • 150g soft goat cheese

For the dressing

  • 2 small red onions finely chopped
  • 5 tablespoons of olive oil
  • 3 tablespoons of red vinegar
  • Few sprigs of fresh parsley finely chopped
  • Salt and pepper

Method

  • Mix the dressing in a small bowl.
  • Put your salad ingredients in a big serving bowl, sprinkle on your walnuts and then the dried mint
  • Drizzle over the dressing and coat well
  • Serve with the toasted bread spread with the goat cheese.
