Stuffed Sweet Potato with Rice and Vegetables

Ingredients

  • 1 Big Sweet Potato
  • ½ Cup Rice
  • 1 Carrot
  • Broccoli
  • Parsley
  • 1 Vegetable Broth
  • 1 Cup water
  • A dash of salt

Method

  • Cut the sweet potato in half, sprinkle it with a little bit of Olive oil and bake in the oven for 30-40 minutes until it is soft
  • Boil the rice with water and add dash of salt, add the carrots and broccoli and vegetable broth until cooked.
  • Sprinkle chopped parsley, salt and pepper to taste
  • Stuff the baked potato with the rice mix
