Stuffed Sweet Potato with Rice and Vegetables

Ingredients
- 1 Big Sweet Potato
- ½ Cup Rice
- 1 Carrot
- Broccoli
- Parsley
- 1 Vegetable Broth
- 1 Cup water
- A dash of salt
Method
- Cut the sweet potato in half, sprinkle it with a little bit of Olive oil and bake in the oven for 30-40 minutes until it is soft
- Boil the rice with water and add dash of salt, add the carrots and broccoli and vegetable broth until cooked.
- Sprinkle chopped parsley, salt and pepper to taste
- Stuff the baked potato with the rice mix
