Peas with Chicken and Cilantro

Ingredients

  • 1 whole chicken
  • 2 Bay leaves
  • 1 Cinnamon Stick
  • 5 Cardamom Pods
  • Salt and pepper
  • 5 medium-sized tomatoes cut into quarter
  • 3 garlic cloves crushed + 3 garlic cloves crushed
  • Olive oil
  • 2 bags of frozen peas
  • 2 medium-sized carrots cut into circles
  • 1 bunch of cilantro
  • 70 grams tomato paste

Method

  • Cut the chicken into pieces
  • Clean properly with Lemon and Vinegar
  • Boil chicken with bay leaves, cinnamon, cardamom, salt and pepper
  • In a separate pan; heat olive oil and fry 3 garlic cloves and then add cut the tomatoes. Let them boil until sauce thickens.
  • Once chicken is tender remove from broth. Debone and remove the skin.
  • Add tomatoes, tomato paste and the diced carrots to the broth. Let it boil until sauce thickens
  • Add frozen peas. Let it boil for another 5 minutes
  • Add chicken pieces back to broth
