Roasted Chicken with Potatoes in Garlic and Thyme

Ingredients

  • 1 chicken with bones cut into 4 pieces, weighs 800 gm)
  • 4 medium potatoes vertically cut into ½ cm thickness
  • ½ cup olive oil
  • 20 cloves mashed garlic
  • ½ cup dried thyme
  • ½ cup lemon juice
  • ½ cup water
  • salt and pepper for seasoning
  • 1 tsp dried coriander
  • ½ tsp paprika

Method

  • Clean the chicken by rubbing it with salt and lemon to help remove that chicken smell, then rinse them under cold running water, drain and dry with kitchen towel.
  • Make shallow cuts in chicken to allow the garlic sauce to go deep inside.
  • Peel potatoes, then cut vertically into ½ cm thickness.
  • Meanwhile prepare the sauce by mixing the garlic, dried thyme, lemon juice olive oil, salt, pepper, coriander and paprika.
  • Place the chicken and the potatoes in your baking tray, add the sauce and rub with your hands to coat all the chicken and the potatoes.
  • Add the 1 cup water
  • Cover the baking tray with foil paper and bake in oven (220 C degree) for 45 minutes.
  • Then remove the foil. And grill under the broiler for 10 minutes.
  • Serve warm with rice and Arabic bread.
