Ingredients

  • 1 can chickpeas or 1.5 cups cooked chickpeas
  • 1/4 cup fresh lemon juice (1 large lemon)
  • 1/4 cup well-stirred tahini 1 small garlic clove, minced
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon ground cumin Salt to taste
  • 2 to 3 tablespoons (30 to 45 ml) water
  • Dash ground paprika, for serving

Beets & Ricotta Hummus

  • 1.5 cup ready-made hummus
  • 1 large beet sliced and boiled
  • 1/4 cup ricotta

Roasted Red Pepper Hummus

  • 1.5 cup ready-made hummus
  • 2 whole roasted red peppers or 3/4 cup chopped jarred roasted red pepper

Edamame & Avocado Hummus

  • 1.5 cup ready-made hummus
  • 1 medium ripe avocado
  • 1.5 cup thawed shelled edamame

Method

Basic Hummus:

  • Blend all ingredients until well combined, adjust salt to taste

Beets & Ricotta Hummus

  • Blend all ingredients together and serve.

Roasted Red Pepper Hummus

  • Blend all ingredients together and serve.

Edamame & Avocado Hummus

  • Peel edamame shells and the avocado and blend all ingredients
