Lentil, Sweet Potato and Coconut Curry –Vegan

Ingredients

  • 1 Cup Diced Onion
  • 1 ½ Tbsp. Canola Oil or Coconut Oil
  • 1 Cup red or brown Lentils
  • 1 medium sweet potato cut into cubes
  • 1 large carrot, chopped
  • 1 Tbsp. mild curry powder
  • 1 tsp. ginger powder
  • Salt and Pepper to taste
  • 2 Cubes Vegetable Broth
  • ½ cup coconut milk
  • ½ Can Chickpeas

Method

  • Heat the Oil and Sautee the Onion until It turns golden. Add the lentils, potato, carrot, Chickpeas and the seasoning.
  • Add the vegetable broth and boil then reduce the heat and cook for approximately 20 minutes, until the lentils and sweet potatoes are tender.
  • Add the coconut milk
  • Season with Salt and Pepper
  • Serve with White Rice
