Roasted Chicken with Lemon and Herbs

Ingredients

  • 4 Large Chicken Thighs
  • 1 medium sized chopped Onion
  • 2 chopped Garlic Cloves
  • 2 Tablespoons Olive Oil
  • Juice of 2 Lemons Freshly
  • chopped Herbs (The amount you want): Parsley, Coriander, Thyme, Rosemary and Lemon balm.
  • Salt, Pepper and Chicken spices
  • Baby Potatoes,
  • Onions,
  • Garlic,
  • Chopped Lemon (optional)

Method

  • Wash Chicken and marinade in Onion, Garlic, Olive Oil, Herbs , Lemon juice , Salt, Pepper and Chicken spices.
  • Leave for minimum 2 hours.
  • Preheat your Oven to 220°C.
  • Put chicken, skin side down in an Oven Casserole and add the Potatoes, Onions and Garlic.
  • Add 1/2 cup of Water to the bottom.
  • Put in the Oven for 20-25 minutes, then turn the Chicken to the other side (Skin side up) and leave it to cook for more 25 minutes, till the Skin side is roasted.
