Umm Ali (Arabic Bread Pudding)

Ingredients

  • 4 cups (1 liter) milk
  • 1 package puff pastry
  • 1 can sweetened condensed milk
  • 1 cup whipping cream Vanilla stick and seeds
  • 1 cup mixed nuts (pistachios, flaked almonds, pine nuts)
  • ½ cup raisins
  • ½ cup dried apricots, sliced thinly
  • Cinnamon powder
  • Desiccated coconut (upon taste)

Method

  • Preheat oven to 175 C, place puff pastry on baking sheets. Bake for 15 minutes until golden and puffed, remove from oven but don’t turn oven off.
  • Break puff pastry and place it into your serving dish.
  • Add the mixed nuts, apricots and raisins, and distribute them evenly.
  • In a saucepan, heat sweetened milk, vanilla, and milk on medium heat. Allow to cook for about 5 minutes.
  • Pour the hot milk over puff pastry/nut mixture.
  • Beat the whipped cream and spread evenly on top.
  • Bake uncovered under broiler, for 10 to 15 minutes until the top is golden brown and becomes puffed up.
  • remove and leave to sit for 10 minutes
  • Garnish with nuts and cinnamon, and serve hot.
