Freekeh Soup with Shredded Chicken

Ingredients

  • ½ cup stone-ground freekeh rinsed in water
  • 250 gm boneless chicken breast
  • 2 liters chicken stock
  • 2 Tbsp. olive oil
  • 1 onion chopped finely
  • 1 tsp. allspice
  • 1tsp. cumin
  • ½ tsp. black pepper
  • Salt

For the chicken broth:

  • 1 kg chicken with bones and skin
  • Salt and pepper
  • Bay leaves
  • 1 stick cinnamon
  • 4 cardamoms
  • 1 onion Water

Method

  • Boil the chicken for 20 minutes with all the above spices, remove from water (use the broth for the soup).
  • Rinse the freekeh with cold water thoroughly in a colander till all pieces of dirt are removed
  • In a medium pot, heat the olive oil and fry the onion until soft. Add the freekeh and the spices, and stir to coat each grain.
  • Pour the strained chicken broth, turn the heat up to high, and bring to boil
  • Add the shredded chicken, then cover the saucepan, turn the heat down to low, and cook until tender, about 45 minutes.
  • To serve, add some chopped parsley, and a squeeze of a lemon.
