Ingredients

  • 1 Tbsp. vegetable oil
  • 2 cups of red lentils
  • 2 large Potato diced finely
  • 4 carrots shredded
  • 2 large onion
  • 1 Liter of water
  • 1 Tbsp. salt
  • 1 Tbsp. cumin
  • Croutons/Dill for garnish

Method

  • Add oil to a sauce pan and add the diced onion until translucent
  • Then add the red lentils to the onions for (5 – 10) minutes until it changes color, and then add carrots and potatoes.
  • Add 1 liter of water and let them cook together for 30 minutes, then add to food processor and pulse until smooth.
  • Add water if the mixture is too thick to thin it down, and then return it to the sauce pan. Add Cumin and Salt and whisk to mix, allowing it to boil for 5 minutes.
  • Serve and garnish with croutons and dill (or parsley to your preference)
