Vegetarian Stuffed Pepper with Quinoa

Ingredients

  • Bell Pepper (depends on need)
  • ½ cup red or black beans
  • 3 Tbsp. Cilantro
  • 1 cup Corn
  • 1 tsp. Garlic Powder
  • ¼ cup onions
  • ½ cup tomatoes
  • 3 cups Quinoa (Cooked)
  • Chili powder (to taste)
  • Salt & Pepper (to taste)
  • 1 tsp. Cumin

Method

  • Preheat Oven and line baking dish with Parchment paper or olive oil
  • In a large bowl mix Quinoa, corn, beans, tomatoes (diced), cilantro, cumin, garlic, onions (chopped), chili powder, salt and pepper
  • Spoon the filling into each bell pepper (it would look nice, if you used different colors)
  • Place the stuffed pepper in the baking dish and bake until the peppers are tender (around 20 minutes)
