Vegetarian Chickpea and Beans Salad

Ingredients

  • 1 Can Black or Red Beans
  • 1 Can Chickpeas
  • 1 Can Corn Olives
  • Cherry Tomatoes (10)
  • 1 Cup Lettuce or any other kind of mixed greens
  • ¼ Cup Cilantro
  • 1 Lemon
  • ¼ tsp Chili Powder
  • Salt to taste
  • 2 Tbsp. Olive Oil
  • 1 tsp Cumin
  • 2 Avocados (Optional)
  • Feta Cheese (if non-Vegan)

Method

  • In a large bowl combine beans, chickpeas, corn, tomatoes, olives (Avocado, is Optional)
  • Prepare the Dressing in a small bowl; whisk lemon juice, olive oil, cumin, chili powder, salt and cilantro
  • Add to the Salad. You can garnish with Feta cheese on top for a non-vegan option
