Ingredients

  • 250g flour 125g cold butter, cut into small cubes

  • 1 egg yolk

  • a pinch of salt

  • ¼ cup of cold water, less or more

For the filling,

  • 5 apples cut into round discs

  • 1 teaspoon of cinnamon

  • 2 tablespoons of cornstarch

  • 3 tablespoons of brown sugar

  • Juice of half a lemon

  • A pinch of salt

Method

  • In a large bowl, mix the flour and salt then using your fingers, gradually work the butter into the flour for about 3 or 4 minutes until it resembles a coarse meal. In a small bowl, beat an egg yolk with a fork and then pour it into the flour mixture. Add the cold water, 1 tablespoon at a time and stir together gently until all of the ingredients are incorporated.

  • Put the dough into a plastic bag. Using a rolling pin, slightly flatten the dough ball into a thick round disc to make rolling easier later. Seal the bag and place them in the freezer until you need it. If you will be using it immediately it’s still a good idea to put in the freezer for about 15 to 20 minutes to chill.

  • When you are ready to use the dough to make a crust, remove from the freezer and allow to thaw for 15 minutes. On a floured surface roll the dough, starting at the centre and working your way out. (Sprinkle some flour over top of the dough if it’s a bit too moist.) If the dough is sticking to the countertop use a metal spatula and carefully scrape it up and flip it over.

  • Mix your filing ingredients in a bowl and let sit for an hour

  • Arrange your sliced apples without the liquid, and fold over the dough edges.

  • Bake in a 200 C oven for 45 minutes until golden and browned.
