How to prepare a delicious Apple tarte Tatin

Ingredients

Rough Pastry: 1 cup all-purpose (plain) flour 2/3 unsalted butter, cold ¼ tsp fine salt ¼ cup ice cold water Filling: 3 large granny smith apples Juice of half a lemon 6 tablespoons unsalted butter 1-1/3 cups granulated sugar, divided pinch salt Rough Puff Pastry (above)

Method

  • Add the flour, salt and cubed cold butter in the food processor, pulse till you end up with crumbles.
  • Add iced cold water a bit at a time and squeeze the dough gently  in your hand go see if it comes together, if so you don't have to use the whole amount of water recommended in the recipe. The amount of water you will be adding depends on the weather.
  • Once you get that, empty the bowl on your counter and try to gather the dough together in a dough without over working it.
  • Roll it on a floured surface into a rectangular then fold like a letter.
  • Turn it 90 degrees and roll again into a rectangular and fold again like a letter. Repeat 5 times and you will see how smoother the dough will become.
  • Wrap and refrigerate over night.
  • For the filling:
  • Peel apples and cut them in quarters or in slices ( I sliced mine to arrange in a fan like shape).
  • Take 1/3 cup of sugar and the juice of lemon and toss your apple with.
  • Keep it on the side while preparing the caramel topping.
  • In a cast iron or a ceramic pie dish (I used a ceramic pie dish) melt butter and add sugar and stir. You will think that you ruined the recipe and that you will end up with a crystallized mess...be patient, as it heats up the sugar will start to melt and turn into amber color so continue till you get to that.
  • Arrange your apples in the shape you like and discard the juice that came out of them.
  • Cook a bit in the caramel sauce for around 5 minutes over low med heat.
  • Remove off heat and let it cool.
  • Flour your surface and roll the chilled dough into a circle that would cover your pie dish or pan.
  • Place on top of the apples and using a sharp knife make some pockets to release the steam from the filling outside.
  • Place in a preheated oven at 200 degrees, cook for around 30 min till the filling is bubbling from the sides and the dough has turned golden brown.
  • Carefully flip it on a dish and let it cool a bit before serving.
  • Serve with a scoop of vanilla ice cream or whipping cream.
