Zaatar Chicken Breast
How to prepare a delicious Zaatar Chicken Breast
Ingredients
3-4 chicken breasts, with bones and skin removed 1/2 tablespoon za’atar Salt and pepper Marinade: Juice of 1 lemon 1 tablespoon of olive oil 1 tablespoon diced white onion 1/2 tablespoon garlic/ginger paste 1 teaspoon sumac 1 teaspoon za’atar 1/4 teaspoon paprika Garnish: 4 thin lemon slices 1 tablespoon pine nuts 1 teaspoon olive oil

Source: Ya Salam Cooking 1. In a mixing bowl, add the lemon juice, olive oil, onion, garlic/ginger paste, sumac, za’atar and paprika, mix well. With a fork, poke several holes into the chicken. Place in the mixture, cover and place in the refrigerator and allow to marinate at least one hour. 2. In an iron skillet on medium heat, add chicken breast (bone side up) and allow bottoms to brown, about 5 minutes. Carefully pour the remaining marinade on top, cover and allow to cook for about 10-12 minutes, flip and cook for a remaining 5 minutes. 3. Meanwhile, in a small saute pan on medium heat, add 1 teaspoon of olive oil and saute lemon slices until lightly brown, brown pine nuts and sit aside. 4. On a serving platter, add chicken, sprinkle with remaining za’atar, salt and pepper, pine nuts and lemon slices.
