Ingredients

2 tablespoons olive oil 1 small white onion, diced 2 garlic cloves, diced 3 teaspoons ground cumin 1 teaspoon ground coriander 1-2 teaspoons harissa paste 2 cups chicken broth (or vegetable for vegetarian) 1 (400 gram) glass jar of chickpeas, drained and washed 1 small tomato, diced

Method

  • In a saucepan on medium heat, add the olive oil. Add the onion and garlic and cook until soft, about 2-3 minutes. Add the cumin and coriander.
  • Stir in the harissa, then add the stock and chickpeas and bring to a simmer. Cover the pan, then cook for about 10 minutes. Add the tomatoes and cook for another 3 minutes or until tomatoes have just softened.
