Spring sugar cookies recipe

Ingredients

cookies: 1 cup all-purpose flour 1/2 teaspoon baking powder Pinch of salt 1/4 teaspoon ground cinnamon 1/4 cup butter, softened 5 tablespoons sugar 1 egg yolk icing: 1/2 cup powdered sugar 1-2 teaspoons milk Food coloring

  • In a mixing bowl, add sugar, butter and egg, with a hand blender, mix. Add flour, baking powder, salt and cinnamon, and mix.
  • Carefully roll dough into a ball, place on plastic wrap and flatten out, cover and place in the freezer for 15 minutes.
  • Meanwhile, pre-heat oven to 350F. Lightly flour a work surface and place the dough down and carefully roll the dough. Carefully cut the shapes into the dough, and place cookies on a nonstick baking mat lined baking sheet. Bake for 12 minutes.
  • While the cookies bake, prepare the icing. In a small bowl, add powdered sugar and a tiny amount of milk at a time until a thick consistency has formed. At the time you can divide into bowls for however many colors you want to use. Mix one drop of food coloring into each one, mix and place in a small plastic bag into a cup (bag sides overlapping the cup top) and spoon the icing do this for each color you have.
  • After the cookies have baked they need to cool completely, about 30 minutes. Cut a tiny hole into the corner of each bag and pipe the icing onto the cookie.
  • Allow to dry.
