Ingredients

16 small pita bread 1 Large onion ( cup) 1 small eggplant (1 cup) 2 medium size zucchini (cup) 2 big tomatoes (1 cup) 1 medium sized green pepper ( cup) 3 cloves of mashed garlic (2 teaspoons) cup of corn kernels teaspoon of salt teaspoon of black pepper 2 tablespoons of dried thyme 2 tablespoons of olive oil 2 cup grated cheese mix (Kashkawan & cheddar) Equipment: Knife Cutting board Non-stick baking sheet (24 X 32 cm) Measuring spoons and cups Grater

Method

  • Chop up the vegetables into small pieces, put them on a non-stick baking sheet and mix with the oil, salt, black pepper and thyme, put the tray in the oven for 20 minutes until brown colored, set aside to cool.
  • Mix the vegetables with the cheese and distribute them into the small pita breads; each piece takes 2 tablespoons of the roasted vegetables (You can use any kind of bread).
  • Toast the sandwich in the oven, in the toaster or even on the stove top.
  • So delicious with Labaneh and Avocado dip (mash one avocado with lemon juice, mashed garlic, Labaneh and some salt).
