Ingredients

  • 8 cream cheese squares
  • 450 g frozen peas
  • 1 small onion (chopped)
  • 1 garlic clove (crushed)
  • 2 teaspoons oil
  • 550 ml hot vegetable or chicken stock
  • Black pepper (freshly ground) to taste
  • 1 teaspoon salt

Method

  • Heat the oil in a saucepan and fry the onion and garlic until the onions are softened
  • Add the peas with the stock and simmer for 15 minutes until the peas become soft
  • Add the cream cheese squares with the salt and pepper
  • Remove them from heat and mash them using a hand blender until they become smooth
  • Garnish with mint leaves
