How to make Seaweed Bread?

Seaweed bread has a very distinctive taste and many nutritional benefits. There are some studies that claim that seaweed bread can actually help you lose weight.

And because this bread is made with whole-meal flour it can make you feel fuller for longer. You can have this bread slightly toasted for breakfast drizzled with olive oil which I personally like or with butter if you like.

Seaweed bread is also easy to make and is sure to impress those who like Japanese cuisine or seafood in general.

Ingredients

  • 300 grams whole meal flour

  • 200 grams AP flour

  • 10 grams instant dried yeast

  • 10 grams salt

  • 10 grams shredded yaki nori

  • 1, 1/2 cups lukewarm water

  • sesame seeds to sprinkle “optional”

Method

  • sprinkle the yeast over the lukewarm water and let it stand in a warm place for 10 mins.

  • In a big mixing bowl add the two types of flour together and the salt and mix everything together.

  • Add the water and yeast mixture and start mixing everything together.

  • Once a dough is formed take it out of the bowl and on your working bench and knead for 10- 15 mins. The dough might be sticky at the beginning but after a good kneading it will become elastic and soft.

  • Once the dough is elastic spread it slightly and add the shredded yaki nori sheets in batches and knead after each addition to incorporate it into the dough.

  • Once all the yaki nori is added, sprinkle some flour on your working bench and start working the dough into a ball but tucking the sided to the centre while rotating.

  • Once the dough is formed into a ball place in a bowl, cover it and leave it to proof in a warm place until it double in size. It will take around 1 hour.

  • After the first proof, take the dough out of the bowl, knead it again into a ball and place it again in the bowl for another 1 hour to proof again.

  • After that, take the dough out of the bowl and roll it in a rectangular shape. Then take 1/3 of the dough from the long side and place to the middle and press it with the palm of your hand. Repeat that to the other long side. Then fold the dough in half and press again with the palm of your hand. This will form a long loaf shape.

  • Place your loaf on a baking tray with baking sheet and sprinkled with some flour. Make sure that you place seam side down. Cover and let it rest for 1 hour.

  • Once rested, you can create slits on the top of your loaf using a sharp knife. Then brush it with some water and sprinkle with sesame seeds.

  • Bake the bread in a preheated oven at 250C for 30-45 mins or until the bread is golden.
