How to prepare a delicious Syrian Barazeq

Ingredients

1 kg flour 500 g ghee (you can use butter) 300 g sugar 200 ml water 2 Tbsp powdered milk 1/2 tsp ground Mehlab For the topping: 1 kg toasted sesame seeds 1/2 cup sugar 1/2 cup smooth apricot jam 1/3 cup water Ground pistachios

  • Mix flour with milk, Mehlab and ghee until well combined.
  • Add sugar to the water and stir till all sugar is dissolved, then add the flour mixture to make soft dough.
  • Cover, and let it rest in the refrigerator for half an hour.
  • Take out and start making small balls, when all dough is ready, cover and set aside while your prepare the topping.
  • To make the topping, mix all ingredients except for pistachios.
  • Now flatten each ball in the palm of your hands.
  • Dip one side in pistachios and the other in sesame mixture.
  • Line your baking sheet with parchment paper and arrange done cookies.
  • Heat oven to 180 and bake for about 10-12 minutes till golden brown.
  • Let it rest on the baking sheet then cool on a wire rack.
  • Enjoy these little addictive crunchy Barazeq with a cup of tea or coffee.
